Island Fin Poké was established in 2016 by Mark Setterington, who had a dream to create a fast-casual restaurant that serves incredible Hawaiian-style poké in an environment that transports you from everyday living to a surf shack on the beach. The brand’s homemade sauces, 25 toppings and sustainably sourced fish will have you tasting the flavors of the islands.

Island Fin Poké is committed to a growth strategy that is resolute to the long-term success of franchise owners. Dedicated to the highest standards of intelligent investment, the co-founders have strategically created an uncluttered and cohesive restaurant design. Small kitchens with limited cooking requirements allow the franchise to allocate a higher percentage of the location to consumer space, which helps facilitate exceptional revenue opportunities.

Setterington, co-founder and CEO of Island Fin Poké, spent time answering some of our most pressing questions.

What differentiates Island Fin Poké from other poké QSR options for consumers?

We stand for three things: incredible food, remarkable service and an easy-to-execute model. We give a full-service experience in a fast-food restaurant, and this is our secret sauce. Our food is amazing, but our service blows people away.

Who makes a great Island Fin Poké owner?

You have to be outgoing, have an urgency to be engaged in your community and be ready to grind. The entrepreneurial spirit is real; your success depends on it!

Are there particular markets in which Island Fin Poké is looking to expand?

We are being opportunistic. We are ready to go anywhere, including international.

Are there any new products/services Island Fin Poké will be implementing?

We have a ton going on behind the scenes that will make us better. One of the most important things is we signed with a great brand/marketing company called InnoVision. These guys are going to help us tremendously!
