The Future of Fast-Casual Franchising

Americans eat millions of sandwiches every day, but as Denise Tran, founder and CEO of Bun Mee, puts it, most of them are “painfully boring.” That realization is what led her to build a brand centered around bringing bánh mì into the fast-casual spotlight.

Bun Mee focuses on elevating a familiar category rather than reinventing it, introducing bold Vietnamese flavors through a format that is fast, consistent and scalable. That approach has allowed it to resonate across a wide range of environments – from neighborhood locations in San Francisco to high-traffic airport settings, where strong demand reinforces the concept’s broad appeal.

For entrepreneurs, that mix of proven performance and early-stage growth creates a clear opening. Bun Mee already has a defined playbook and operational model in place, but it’s still at a stage where franchise owners can grow alongside it. However, the company is also intentional about who it brings into the system.

“Our ideal franchisee isn’t just chasing a return,” Tran explained. “They’re someone who lights up when they talk about their community, someone who believes a meal should make people feel something, not just full. We’re looking for owner-operators who are ready to lead a team, be the face of the brand locally and really build something that people love.”

Additionally, the Bun Mee team makes sure to stay closely involved from the start. Bun Mee supports owners from launch through growth with hands-on opening support, operational guidance, marketing resources, and systems built to help them scale over time.

“We don’t hand you a sandwich and wave goodbye,” Tran said. “We guide you through site selection, training and opening, and then we stay with you through ongoing operations with tools, support and regular check-ins because your success is our success.”

Looking ahead, Bun Mee is positioned at the intersection of two strong industry trends as fast-casual dining continues to expand and consumer demand for global flavors becomes more mainstream.

“We’re not chasing a trend. We are the trend,” Tran said. “We’ve got over a decade of proof in one of the best food cities in the country to back it up. What we’re building is an intentional, community-rooted franchise system with a menu that genuinely makes people happy.”
