The Island Fin Poké franchise is a dream realized by Mark Setterington. He wanted to create a fast-casual Hawaiian-style concept that serves delicious, super-nutritious poke bowls of 480-700 calories with 40 grams of protein. The brand’s fresh, tasty, and healthy bowls are meeting society’s health-obsessed culture and are highly sought after.

Guests who dine at Island Fin Poké are met with a full-service experience in an immaculate, fast-casual restaurant. In addition to its welcoming family atmosphere, Island Fin Poké features vast poké bowl offerings sure to please every family member. The build-your-own menu includes rice, protein options, mix-ins, drool-worthy sauces, and toppings. Island Fin Poké offers samples in the dining room and employs a waitstaff to fill drinks. Food is delivered to tables that are then bused after the meals have been enjoyed. Guests can expect their tastebuds to dance through every bite of their poké bowl as they relax in the surf-shack style restaurant.

Island Fin Poké is a textbook example of a franchise that is a family affair for CEO and co-founder Setterington and his daughters. Taylor and Zoe Setterington have been by their father’s side throughout the franchise launch and continue to play critical roles on the Island Fin Poké team. As franchise trainers, Taylor and Zoe help new franchisees from their corporate location and travel to grand openings to help franchisees and their staff with every detail of running a successful Island Fin Poké franchise. The brand’s training program assures that guest experience is the same from state to state.

“I love traveling, visiting new communities throughout the country, and standing alongside the new franchise owners as they introduce Island Fin Poké to their neighborhoods,” said Taylor, who is pursuing a degree in business administration. “Our schedules are always jam-packed with training franchisees in the corporate location, traveling to openings, or preparing for our first franchise conference. Life is busy, but I couldn’t be happier. I found my life’s path and wouldn’t have it any other way. You have to love what you do, and being in a family business makes what you do fun!”

Zoe, who is also in college for business administration, oversees training at the Florida locations. “Our next opening will be in St. Petersburg, and we couldn’t be more excited! I love being with my family and never wonder when I get to see them, as we are always together. It is super exciting to be a part of the growth of this company. I love getting to meet new people all the time as we welcome the franchisees and their staff. It is truly wonderful to be a part of our family business,” said Zoe.

Setterington is thrilled to have his family alongside him as the business continues to grow. Island Fin Poké franchises have opened across the country, from Salinas, California, to Worcester, Massachusetts, and the cool-casual brand isn’t slowing down anytime soon. Recently, a location opened in Downers Grove, Illinois, and diners who value fresh, healthy food can expect locations in Charlotte, North Carolina, and Georgia to open shortly.
